Crockpot Beef Stew
I wanted to take a meal to a young family so I decided to make this yummy and hearty crockpot beef stew. Anything I can put in the slow cooker is always a good thing. This soup is perfect for cold, winter nights.
Crockpot Beef Stew
This beef stew is a Sunday family favorite. So easy and so good!
Ingredients
- 2 tablespoons olive oil
- 2 pounds stew meat, cut into 1-inch cubes
- Salt and pepper to taste
- 5 large potatoes, peeled and cubed
- 1 bag baby carrots (you can cut them up if you prefer smaller pieces)
- 1 onion, peeled and sliced (optional)
- 1 can cream of celery soup
- 1 can cream of mushroom soup
- 1 can golden mushroom soup
- 1 envelope Lipton Onion Soup Mix
Instructions
- Heat oil in a skillet over medium heat. Season beef with salt and pepper, to taste. Add beef to skillet and cook until evenly browned about 2-3 minutes.
- Place beef, potatoes, carrots, and onion into a crockpot. I like to use a crockpot liner for easy cleanup.
- In a large bowl, mix together all of the soups and onion soup mix. Pour over beef mixture.
- Cover and cook on low for 7-8 hours or high for 3-4 hours.
