SHEET PAN EASTER DINNER

This easy Sheet Pan Easter Dinner features roasted baby red potatoes, fresh green beans and savory ham topped with sweet pineapple. Tossed in a flavorful garlic-thyme seasoning and baked to perfection, it's a simple, delicious meal perfect for Easter.

Ingredients

  • 1 lb baby red potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 8 slices thick-cut ham
  • 8 pineapple slices
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon minced garlic (jarred or fresh)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 450°. Line a large sheet pan with parchment paper.
  2. In a bowl, mix olive oil, salt, pepper, garlic, thyme, and onion powder.
  3. Place potatoes on one end of the sheet pan, green beans in the middle, and ham slices on the other side with a pineapple slice between each slice.
  4. Drizzle the olive oil mixture over the potatoes and green beans, tossing gently to coat.
  5. Roast in the oven for 25-30 minutes, tossing the vegetables halfway through, until the potatoes are tender and slightly crispy.
  6. Serve immediately and enjoy!
