CHICKEN TACO CASSEROLE
This taco casserole is sure to be a family favorite. It's crunchy and cheesy and full of flavor. You will love how easy it is to make too!
Ingredients
- 2 (10.75 oz.) cans of cream of chicken soup
- 1 1/2 cups sour cream
- 1 (14 oz.) can of diced tomatoes with green chilis (I like Rotel)
- 1 can (15 oz.) black beans, rinsed and drained
- 1 (1 oz.) packet taco seasoning mix
- 4 boneless, skinless chicken breasts, cooked and shredded
- 1 bag (13 oz.) tortilla chips (I like Doritos)
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat oven to 350°.
- Lightly grease a 9x13 inch pan.
- In a large bowl, combine the chicken soup, sour cream, diced tomatoes, black beans, taco seasoning and chicken. Set aside.
- Crush chips (I just crush them with with my hands) and spread half of them on the bottom of the pan.
- Spread half of the chicken mixture over the tortillas or Doritos.
- Top with 1 cup of cheese. Repeat layers.
- Bake for 30 minutes, until bubbly and cheese is starting to brown.
