CHICKEN TACO CASSEROLE

This taco casserole is sure to be a family favorite. It's crunchy and cheesy and full of flavor. You will love how easy it is to make too!

Ingredients

  • 2 (10.75 oz.) cans of cream of chicken soup
  • 1 1/2 cups sour cream
  • 1 (14 oz.) can of diced tomatoes with green chilis (I like Rotel)
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 (1 oz.) packet taco seasoning mix
  • 4 boneless, skinless chicken breasts, cooked and shredded
  • 1 bag (13 oz.) tortilla chips (I like Doritos)
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 350°.
  2. Lightly grease a 9x13 inch pan.
  3. In a large bowl, combine the chicken soup, sour cream, diced tomatoes, black beans, taco seasoning and chicken. Set aside.
  4. Crush chips (I just crush them with with my hands) and spread half of them on the bottom of the pan.
  5. Spread half of the chicken mixture over the tortillas or Doritos.
  6. Top with 1 cup of cheese. Repeat layers.
  7. Bake for 30 minutes, until bubbly and cheese is starting to brown.
