We love this delicious breakfast casserole. It's hearty and tasty and so simple to make. Perfect for Christmas morning!
Ingredients
- 24 ounce bulk pork sausage
- 1 medium bell pepper, chopped
- 1 medium onion, chopped
- 3 cups frozen hash browns
- 2 cups shredded Cheddar cheese (8 oz)
- 1 cup Bisquick mix
- 2 cups milk
- 1/4 teaspoon pepper
- 4 eggs
Instructions
- Heat oven to 400°. Grease a 13x9 baking dish.
- Cook sausage, bell pepper, and onion in 10-inch skillet over medium heat stirring occasionally until sausage is no longer pink; drain.
- Stir together the sausage mixture, potatoes, and 1 1/2 cups of cheese in a large bowl.
- In a medium-sized bowl, stir Bisquick mix, milk, pepper, and eggs until well blended. Pour into a large bowl with sausage mixture and mix well. Pour into casserole dish.
- Bake uncovered for 40 to 45 minutes or until the knife inserted in the center comes out clean. Sprinkle with the remaining cheese. Bake for 1 to 2 minutes longer or just until the cheese is melted. Cool for 5 minutes.
- Make up to 24 hours ahead, covering and refrigerating the casserole until 15 minutes before baking. Remove from the fridge while the oven heats up, then keep an eye on the doneness as it may take a few minutes longer since the food is chilled.
