What is it about minis? I love my pumpkin bread but when you make a little miniature form, it’s just so much cuter!

CHOCOLATE CHIP PUMPKIN MUFFINS

Using my famous pumpkin recipe and simply adding chocolate chips this Fall recipe is a family favorite. We love these yummy muffins!

Ingredients

  • 1 1/3 cups vegetable oil
  • 5 eggs
  • 1 16-ounce can pumpkin
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 (5.1 ounce) large package OR 2 (3 ounce) packages vanilla instant pudding
  • 1 1/2 cups mini semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°, and grease the mini muffin pan.
  2. Mix oil, eggs, and pumpkin in a mixing bowl and beat well.
  3. Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to the pumpkin mixture and mix until well blended.
  4. Stir in pudding mix with a mixer until well blended.
  5. Add chocolate chips to the pumpkin mixture and stir well. (optional)
  6. Evenly distribute the batter into your muffin pans (each cup should be about 3/4 full). Add more chocolate chips on top if you would like.
  7. Bake for 20 minutes or until a toothpick comes out clean.
