Simple Energy Balls
With school starting back, these simple no-bake energy balls are the perfect breakfast or snack on the go! They are packed full of protein to keep you feeling full longer. Sweet Sadie helped me make a batch the other day for all of the grands visiting. They were gone instantly! You can find this recipe in my new Volume 4 cookbook, Simply Six.
ENERGY BALLS
Ingredients
- 2 big spoonfuls of peanut butter
- 1/4 cup of honey
- Splash of vanilla
- 2 cups of quick oats
- 1/3 cup of mini chocolate chips
- sea salt
Instructions
- In a microwave safe bowl, melt the peanut butter for 1 minute in the microwave.
- Add honey, vanilla, and oats. Stir well. Let cool for a few minutes.
- Add the chocolate chips. Mix. Roll into small bowls and place on a cookie sheet.
- Sprinkle with sea salt.
- Place the cookie sheet in the freeze for 30 minutes. Then transfer the balls into an air-tight container.
- Store in the refrigerator.
