Simple Energy Balls

With school starting back, these simple no-bake energy balls are the perfect breakfast or snack on the go! They are packed full of protein to keep you feeling full longer. Sweet Sadie helped me make a batch the other day for all of the grands visiting. They were gone instantly! You can find this recipe in my new Volume 4 cookbook, Simply Six.

Ingredients

  • 2 big spoonfuls of peanut butter
  • 1/4 cup of honey
  • Splash of vanilla
  • 2 cups of quick oats
  • 1/3 cup of mini chocolate chips
  • sea salt

Instructions

  1. In a microwave safe bowl, melt the peanut butter for 1 minute in the microwave.
  2. Add honey, vanilla, and oats. Stir well. Let cool for a few minutes.
  3. Add the chocolate chips. Mix. Roll into small bowls and place on a cookie sheet.
  4. Sprinkle with sea salt.
  5. Place the cookie sheet in the freeze for 30 minutes. Then transfer the balls into an air-tight container.
  6. Store in the refrigerator.
