The Best Pumpkin Bars
These pumpkin bars are made using my famous pumpkin bread recipe, which can be found in my Volume 1 cookbook. They are delicious and so yummy with my favorite buttercream frosting. You will LoVe them!

Ingredients
PUMPKIN BARS
- 1 1/3 cups vegetable oil
- 5 eggs
- 1 16-ounce can pumpkin
- 2 cups flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 2 3-ounce packages instant vanilla pudding mix
BUTTERCREAM FROSTING
- 1 cup butter, softened
- 3 to 4 cups powdered sugar
- 2 teaspoons vanilla
- Pinch of salt
- 2 to 3 tablespoons milk
Instructions
PUMPKIN BAR
- Heat oven to 350°. Grease bottom and sides of a 10x15x1-inch pan with cooking spray.
- In a large bowl, beat oil, eggs and pumpkin in a mixing bowl until well blended.
- Add flour, sugar, salt, cinnamon, nutmeg and baking soda to pumpkin mixture and mix well. Add pudding mix. Mix until well blended. Scrape sides frequently.
- Pour into pan. Bake 25 to 30 minutes or until toothpick in center comes out clean. Cool completely.
BUTTERCREAM FROSTING
- Place softened butter in a stand mixer bowl and cream the butter until it is smooth and lightened in color. About 3 minutes. Add powdered sugar, 1/2 cup at a time. Mix well. Scrape sides of bowl frequently.
- Add vanilla and a pinch of salt and combine until well blended. Add milk if needed.
- Spread on cooled pumpkin bars. Enjoy!
