Sweet Potato Casserole
It’s not the holidays without a yummy sweet potato casserole on the table. With the amount of sugar in this recipe, I know that this is more of a dessert, but let’s call it a side dish. This recipe is in my Volume 1 cookbook.
SWEET POTATO CASSEROLE
Ingredients
Casserole
- 3 cups cooked sweet potatoes, mashed
- 1 cup sugar
- 2 eggs
- 2 teaspoon vanilla
- 1/2 cup butter, softened
- 1/3 cup milk
Topping
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup pecans, chopped
- 1/3 cup butter, melted
Instructions
- Mash potatoes & add sugar, eggs, vanilla, butter, and milk.
- Mix well.
- Put in greased 9 x 13 baking dish.
- Mix all topping ingredients together and sprinkle on top of potatoes.
- Bake for 30 minutes at 350°.
