Sweet Potato Casserole

It’s not the holidays without a yummy sweet potato casserole on the table. With the amount of sugar in this recipe, I know that this is more of a dessert, but let’s call it a side dish. This recipe is in my Volume 1 cookbook.

Ingredients

Casserole
  • 3 cups cooked sweet potatoes, mashed
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoon vanilla
  • 1/2 cup butter, softened
  • 1/3 cup milk
Topping
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup pecans, chopped
  • 1/3 cup butter, melted

Instructions

  1. Mash potatoes & add sugar, eggs, vanilla, butter, and milk.
  2. Mix well.
  3. Put in greased 9 x 13 baking dish.
  4. Mix all topping ingredients together and sprinkle on top of potatoes.
  5. Bake for 30 minutes at 350°.
