Hearty Potato & Ham Soup

This is one of our favorite soups to eat in the winter...but we love it throughout the year too. So easy and so delicious!

Ingredients

  • 5 lbs. russet or red potatoes cut into 1" cubes
  • 1 thick slice cooked ham, cut into small pieces
  • 1 stick butter
  • 1 cup half & half
  • 1/2 cup sour cream
  • salt and pepper to taste

Instructions

  1. Place potatoes into a large pot and add just enough water to cover potatoes.
  2. Cover pot and bring to a boil.
  3. Remove lid and cook on medium heat for 20 minutes and potatoes are fork-tender.
  4. Reduce the heat and add the ham and butter.
  5. In a separate bowl, whisk half & half and sour cream together.
  6. Over low heat, slowly add the half & half/sour cream mixture to soup.
  7. Season with salt and pepper to taste.
  8. Keep on low heat until serving time.
