CHOCOLATE CHIP PUMPKIN MUFFINS

Using my famous pumpkin recipe and simply adding chocolate chips this Fall recipe is a family favorite. We love these yummy muffins!

Ingredients

  • 1 1/3 cups vegetable oil
  • 5 eggs
  • 1 16-ounce can pumpkin
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 (5.1 ounce) large package OR 2 (3 ounce) packages vanilla instant pudding
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°, and grease two 12 count muffin pans or line with muffin liners.
  2. Mix oil, eggs and pumpkin in mixing bowl and beat well.
  3. Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to pumpkin mixture and mix until well blended.
  4. Stir in pudding mix with mixer until well blended.
  5. Add chocolate chips to pumpkin mixture and stir well.
  6. Evenly distribute the batter into your muffin pans (each cup should be about 3/4 full). Add more chocolate chips on top if you would like.
  7. Bake for 20 to 25 minutes or until a toothpick comes our clean. If you make mini muffins, you will want to cut the baking time in half.
