Chocolate Chip Pumpkin Muffins
Using my famous pumpkin recipe and simply adding chocolate chips this Fall recipe is a family favorite. We love these yummy muffins!
CHOCOLATE CHIP PUMPKIN MUFFINS
Using my famous pumpkin recipe and simply adding chocolate chips this Fall recipe is a family favorite. We love these yummy muffins!
Ingredients
- 1 1/3 cups vegetable oil
- 5 eggs
- 1 16-ounce can pumpkin
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1 (5.1 ounce) large package OR 2 (3 ounce) packages vanilla instant pudding
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°, and grease two 12 count muffin pans or line with muffin liners.
- Mix oil, eggs and pumpkin in mixing bowl and beat well.
- Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to pumpkin mixture and mix until well blended.
- Stir in pudding mix with mixer until well blended.
- Add chocolate chips to pumpkin mixture and stir well.
- Evenly distribute the batter into your muffin pans (each cup should be about 3/4 full). Add more chocolate chips on top if you would like.
- Bake for 20 to 25 minutes or until a toothpick comes our clean. If you make mini muffins, you will want to cut the baking time in half.
