BACON-POTATO CORN CHOWDER
Our daughter Madison loves this delicious soup. It is made with corn, potatoes, and bacon. Sooooo good! It always hits the spot.
Ingredients
- 1/2 pound bacon strips, chopped
- 1/4 cup onion, chopped
- 5 medium Russet potatoes, peeled and cubed
- 1 can (14.3 oz.) creamed corn
- 1 can (14.3 oz.) kernel corn
- 1 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with slotted spoon; drain on paper towels. Discard drippings, reserving 1 1/2 tablespoon in pan.
- Add onion to drippings; cook and stir over medium heat-high heat until tender.
- Meanwhile, place potatoes in a large saucepan; add enough water to just cover the potatoes (too much water will make the soup too thin). Bring to boil over high heat. Reduce heat to medium; cook uncovered, 10 to 15 minutes or until tender.
- Add bacon and onion, corn, milk, salt and pepper. Heat through.
