Quick Pasta Fagioli Soup
This is my favorite soup at Olive Garden! But in less than 30 minutes you can make your own. This recipe can be found in our Volume 3 (Dump Cooking) cookbook.
QUICK PASTA FAGIOLI SOUP
Ingredients
- 1 box of Ditalini Pasta
- 1 can of cannellini beans, not drained
- 1 (10 oz.) box of frozen chopped spinach, thawed
- 1 (24 oz.) jar of Pasta Sauce (I used Prego Garlic and Herb)
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions
- In a large pot, cook the pasta according to the package directions. Save 2 cups of the pasta water.
- Add the beans, spinach, and pasta sauce.
- Season with salt and pepper.
- Simmer for 10 minutes. Top with cheese if you would like.
