Pumpkin Roll

This pumpkin roll recipe is made with my famous pumpkin bread recipe. It's always a crowd favorite, and easier than ever to make!

Ingredients

Pumpkin Roll Batter
  • 1 1/3 cups vegetable oil
  • 5 eggs
  • 1 16-ounce can pumpkin
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 (5.1 ounce) large package OR 2 (3 ounce) packages vanilla instant pudding
Cream Cheese Filling
  • 8 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, plus more for dusting

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix oil, eggs, and pumpkin in a mixing bowl and beat well.
  3. Add flour, sugar, salt, cinnamon, nutmeg, and baking soda to the pumpkin mixture and mix until well blended.
  4. Stir in pudding mix with mixer until well blended.
  5. Line a jelly roll pan (9" x 13") with waxed paper, leaving an extra inch of waxed paper sticking up on both long sides of the pan so that you can easily lift the cake out after baking.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 14-15 minutes until a toothpick inserted in the center comes out clean.
  8. Immediately lift the waxed paper and hot cake out of the pan and onto a flat surface.
  9. While the cake is hot, starting at one of the short ends, gently and slowly roll the cake and waxed paper all the way up. Allow it to cool completely, on top of a wire cooling rack.
  10. While the cake roll is cooling, mix the cream cheese, butter, vanilla, and powdered sugar together with an electric mixer until it is smooth.
  11. Once the cake roll is cooled completely, unroll it very carefully. Gently smooth the filling in an even layer over the cake.
  12. Roll up the cake without the waxed paper. Cover with plastic wrap and refrigerate for at least one hour before serving.
  13. Dust the top with powdered sugar, cut into slices, and serve.
