Mexican Street Corn Dip

I am making MEXICAN STREET CORN DIP with Lauren Sisler! She’s an ESPN sideline reporter, motivational speaker, author, and one of my favorite people. So many of you saw Lauren's corn dip at our family game night and wanted the recipe. She is in the office today sharing her recipe. It's so good!

MEXICAN STREET CORN DIP

MEXICAN STREET CORN DIP

Ingredients

  • 2 cans sweet whole kernel corn, drained
  • 1 (8 oz.) block of cream cheese, softened
  • 1/2 to 1 cup Mayonnaise to taste
  • 1 cup Cotija Cheese (you can use Feta cheese)
  • 2 cups Fiesta Cheese, divided
  • the juice from 1 lime
  • 1 tsp. Chili powder
  • 1 Tbsp. sugar

Instructions

  1. Add all ingredients to a bowl and mix well.
  2. Put mixture in a sprayed 8x8 or 9x9 baking dish.
  3. Bake at 350° for 15 minutes.
  4. Remove from oven and add remaining cheese and return to oven for about 5 minutes or until the cheese is melted.
