I love all of Mama Sue's recipes. They are always yummy and easy to make. This apple cake is no exception. Moist and delicious! Your family will love this special treat.
Ingredients
- 2 cups sugar
- 1 cup oil
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped nuts (I used pecans)
- 3 cups finely chopped apples
- 3 cups all-purpose flour
- Dash of salt
- 1 teaspoon baking soda
- 1/4 to 1/2 cup of water, if needed
Instructions
- Preheat oven to 325°. Grease and flour two 9x5-inch loaf pans.
- Combine sugar, oil, eggs, and vanilla. Mix well.
- Add pecans and apples to the mixture and stir.
- Add the flour, salt and baking soda. Mix well. If the mixture seems dry, add 1/4 to 1/2 cup of water. (I did not need to add the water)
- Pour mixture into the loaf pans. Bake for 50 to 60 minutes until tops are golden brown and toothpick inserted in the middle comes out clean.I baked mine for an hour.
- Serve warm with vanilla ice cream or a pat of real butter.
