SIMPLE LOADED SWEET POTATOES

These Loaded Sweet Potatoes are the ultimate cozy side dish! With a buttery cinnamon-sugar topping, crunchy pecans, and golden marshmallows, they're a sweet and satisfying addition to any meal.

Ingredients

  • 4 medium sweet potatoes
  • 4 tablespoons butter, softened
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup pecans, chopped
  • 1/4 cup mini marshmallows (for each potato)

Instructions

  1. Preheat your oven to 425°. Wash the potatoes and pierce each with a fork. Place them on a baking sheet lined with aluminum foil and bake for 45 minutes, or until tender.
  2. In a small bowl, mix the softened butter, brown sugar, cinnamon, and pecans until combined.
  3. Remove the sweet potatoes form the oven and slice open lengthwise. Dollop the cinnamon mixture onto each potato, spreading it slightly to melt into the potato.
  4. Sprinkle 1/4 cup mini marshmallows evenly over the potatoes.
  5. Place the potatoes back in the oven for 20 to 30 seconds, or until marshmallows are golden brown. Watch closely to avoid burning.
  6. Serve the sweet potatoes warm and enjoy!
