These Loaded Sweet Potatoes are the ultimate cozy side dish! With a buttery cinnamon-sugar topping, crunchy pecans, and golden marshmallows, they're a sweet and satisfying addition to any meal.
Ingredients
- 4 medium sweet potatoes
- 4 tablespoons butter, softened
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup pecans, chopped
- 1/4 cup mini marshmallows (for each potato)
Instructions
- Preheat your oven to 425°. Wash the potatoes and pierce each with a fork. Place them on a baking sheet lined with aluminum foil and bake for 45 minutes, or until tender.
- In a small bowl, mix the softened butter, brown sugar, cinnamon, and pecans until combined.
- Remove the sweet potatoes form the oven and slice open lengthwise. Dollop the cinnamon mixture onto each potato, spreading it slightly to melt into the potato.
- Sprinkle 1/4 cup mini marshmallows evenly over the potatoes.
- Place the potatoes back in the oven for 20 to 30 seconds, or until marshmallows are golden brown. Watch closely to avoid burning.
- Serve the sweet potatoes warm and enjoy!
