Easy Layered Lemon Delight

Lemon Delight is a creamy layered lemon dessert with sweet cream cheese, lemon pudding and a shortbread crust. Light and refreshing, it is so YuMmY! This recipe was in a cookbook that I received as a wedding present almost 40 years ago.

EASY LAYERED LEMON DELIGHT

Lemon Delight is a creamy layered lemon dessert with sweet cream cheese, lemon pudding and a shortbread crust. Light and refreshing, it is so YuMmY!

Ingredients

CRUST
  • 2 sticks butter
  • 2 cups flour
  • 2 tablespoons sugar
FIRST LAYER
  • 2- 8 oz packages of cream cheese
  • 1 1/2 cups powdered sugar
SECOND LAYER
  • 2 (3.4 oz) instant lemon pie filling
THIRD LAYER
  • 8 oz Cool Whip
  • Optional- 1/3 cup chopped pecans

Instructions

CRUST
  1. Preheat oven to 350°. In a medium sized bowl, mix butter, flour and sugar together. Blend with hands until a soft dough forms.
  2. Spread into a greased 9x13 baking dish.
  3. Bake for 20 minutes. Remove from oven. Cool.
FIRST LAYER
  1. In a medium sized bowl mix cream cheese and powdered sugar until smooth. Spread on cooled crust.
SECOND LAYER
  1. Make pudding exactly as directed on box using full amount of milk. Spread on cream cheese layer.
TOPPING
  1. Top with Cool Whip.
  2. Optional- Sprinkle chopped pecans on top of Cool Whip.
