DEANNE'S CHOCOLATE CHIP COOKIES
This recipe is a delightful twist on the classic cookie, blending the perfect balance of sweetness and texture. With a chewy base of oats and coconut, these cookies are packed with rich chocolate chips and a hint of vanilla.
Ingredients
- 1 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 2/3 cup coconut
- 1 teaspoon vanilla
- 1 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 1/2 cups old fashioned oatmeal
- 1 12 oz bag semi sweet chocolate chips
Instructions
- Preheat oven to 350°.
- In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until smooth and creamy.
- Add the egg, shredded coconut, and vanilla extract. Mix until well combined.
- Gradually add the flour, baking soda, salt and baking powder to the wet mixture. Stir until just combined.
- Fold in the oatmeal and chocolate chips. Mix until evenly distributed.
- Drop rounded tablespoons of the dough onto your baking sheets, spacing them about 2 inches apart. Add a few M&M's to the top of the cookies if you prefer.
- Bake for 10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
