DEANNE'S CHOCOLATE CHIP COOKIES

This recipe is a delightful twist on the classic cookie, blending the perfect balance of sweetness and texture. With a chewy base of oats and coconut, these cookies are packed with rich chocolate chips and a hint of vanilla.

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2/3 cup coconut
  • 1 teaspoon vanilla
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups old fashioned oatmeal
  • 1 12 oz bag semi sweet chocolate chips

Instructions

  1. Preheat oven to 350°.
  2. In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until smooth and creamy.
  3. Add the egg, shredded coconut, and vanilla extract. Mix until well combined.
  4. Gradually add the flour, baking soda, salt and baking powder to the wet mixture. Stir until just combined.
  5. Fold in the oatmeal and chocolate chips. Mix until evenly distributed.
  6. Drop rounded tablespoons of the dough onto your baking sheets, spacing them about 2 inches apart. Add a few M&M's to the top of the cookies if you prefer.
  7. Bake for 10 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
