Cheesy Funeral Potatoes

Even though this is a popular comfort food to take to a family after a funeral, we enjoy them during the holidays too. So cheesy and so good! This recipe is in my Volume 1 cookbook on page 18. It’s a family favorite!

CHEESY FUNERAL POTATOES

Ingredients

  • 1 (10.75) oz. can of cream of chicken soup
  • 1 cup sour cream
  • 1/4 cup butter, melted
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 (32 oz) package frozen cubed hash brown potatoes, thawed
  • 2 cups sharp Cheddar cheese, grated
  • 3 cups cornflakes, lightly crumbled
  • 2 Tbsp butter, melted

Instructions

  1. Preheat the oven to 350°.
  2. Lightly grease a 9 x 13“ baking dish set it aside.
  3. In a large bowl, mix together the cream of chicken soup, sour cream, butter, salt, pepper, hash brown potatoes, and cheddar cheese.
  4. In a medium bowl, toss the lightly crushed cornflakes with the butter until evenly combined.
  5. Evenly spread the potatoes into a prepared casserole dish and top with the buttered cornflakes.
  6. Bake for 40 to 45 minutes, until hot and bubbly around the edges.
