Cheesy Funeral Potatoes
Even though this is a popular comfort food to take to a family after a funeral, we enjoy them during the holidays too. So cheesy and so good! This recipe is in my Volume 1 cookbook on page 18. It’s a family favorite!
CHEESY FUNERAL POTATOES
Ingredients
- 1 (10.75) oz. can of cream of chicken soup
- 1 cup sour cream
- 1/4 cup butter, melted
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 (32 oz) package frozen cubed hash brown potatoes, thawed
- 2 cups sharp Cheddar cheese, grated
- 3 cups cornflakes, lightly crumbled
- 2 Tbsp butter, melted
Instructions
- Preheat the oven to 350°.
- Lightly grease a 9 x 13“ baking dish set it aside.
- In a large bowl, mix together the cream of chicken soup, sour cream, butter, salt, pepper, hash brown potatoes, and cheddar cheese.
- In a medium bowl, toss the lightly crushed cornflakes with the butter until evenly combined.
- Evenly spread the potatoes into a prepared casserole dish and top with the buttered cornflakes.
- Bake for 40 to 45 minutes, until hot and bubbly around the edges.
