Darryl’s Favorite Peanut Butter Cookie

With our grands in town, I’ve been making all of the things! For an extra special treat, I made my homemade peanut butter cookies from the Volume 1 cookbook. They are so good!

PEANUT BUTTER COOKIES

Peanut Butter Cookies are Darryl's favorite. They are super easy to make and delicious too!

Ingredients

  • 1/2 cup shortening
  • 3/4 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar, for rolling (additional)

Instructions

  1. Heat oven to 375°. Beat shortening and peanut butter in a large bowl until well blended.
  2. Add 1/3 cup of granulated sugar and brown sugar; beat until fluffy.
  3. Add egg, milk, and vanilla; beat well.
  4. Stir together flour, baking soda, and salt; gradually beat into peanut butter mixture.
  5. Shape dough into 1-inch balls. Roll in granulated sugar. Flatten with a fork in a criss-cross pattern.
  6. Bake for 8 minutes or until lightly browned. Do not overbake. Cool.
