CAJUN 15 BEAN SOUP
A warm, comforting bowl of goodness, this simple dish requires just a handful of ingredients, yet delivers a hearty and flavorful meal. We love this soup served with a side of delicious cornbread.
Ingredients
- 20 oz 15 Bean Soup
- 1 lb. mild or hot Italian sausage, Polish sausage, or Ham (I used Conecuh hot and spicy sausage)
- 1 large onion, chopped
- 1 14.5 oz can diced tomatoes
- Juice of 1 lemon
- 1-2 cloves garlic, minced

- Place rinsed beans in a large pot with 10 cups of water.
- Bring beans to a boil. Reduce heat, cover and continue a medium boil for 60-70 minutes. Stir occasionally.
- While beans are boiling, in a skillet, saute onion, garlic, and sausage, until sausage is browned. Drain excess grease.
- After boiling, add sautéed ingredients along with tomatoes, lemon juice and contents of the cajun seasoning packet.
- Reduce heat, cover and lightly boil for 45 minutes. Salt and pepper to taste.
