Ingredients

  • 20 oz 15 Bean Soup
  • 1 lb. mild or hot Italian sausage, Polish sausage, or Ham (I used Conecuh hot and spicy sausage)
  • 1 large onion, chopped
  • 1 14.5 oz can diced tomatoes
  • Juice of 1 lemon
  • 1-2 cloves garlic, minced

Instructions

  1. Place rinsed beans in a large pot with 10 cups of water.
  2. Bring beans to a boil. Reduce heat, cover and continue a medium boil for 60-70 minutes. Stir occasionally.
  3. While beans are boiling, in a skillet, saute onion, garlic, and sausage, until sausage is browned. Drain excess grease.
  4. After boiling, add sautéed ingredients along with tomatoes, lemon juice and contents of the cajun seasoning packet.
  5. Reduce heat, cover and lightly boil for 45 minutes. Salt and pepper to taste.
