SIMPLE CHEESY CAULIFLOWER

I LoVe my mom's homemade cheesy cauliflower. Honestly, I can eat the entire pot all by myself! It's so YuMmY!

Ingredients

  • 1 1/2 cups water
  • 1 medium size head of cauliflower, washed and cut into pieces, OR one 2 lb. bag fresh cut cauliflower
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups milk
  • 1 cup sharp cheddar cheese (cubed) OR 1 cup shredded cheddar cheese

Instructions

  1. Place the cauliflower florets into a medium sized pot and add 1/1/2 cups water.
  2. Bring water to a boil over high heat. Boil at a simmer for 7- 9 minutes until the cauliflower is fork tender. Drain cauliflower. Set aside.
  3. In a medium size saucepan over medium heat, add the butter and melt.
  4. Whisk in the flour, salt, pepper.
  5. Slowly whisk in the milk.
  6. Add in the cheese and mix until cheese is melted.
  7. Pour cheese sauce over cauliflower and stir gently.
  8. Enjoy!
