CHEESY SQUASH CASSEROLE

Squash casserole has always been one of my favorite dishes. This recipe is simple and easy to make. DeLiCiOuS!

Ingredients

  • 1 large onion, chopped
  • 4 tablespoon (1/2 stick) butter
  • 3 cups cooked squash, drained with all the water squeezed out
  • 1 cup crushed Ritz crackers, plus additional for topping
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup grated Cheddar cheese

Instructions

  1. Preheat the oven to 350°.
  2. Saute onion in butter for 5 minutes. Remove from pan and mix all ingredients together.
  3. Pour into a buttered 9x9 casserole dish and top with cracker crumbs.
  4. Bake for 25 to 30 minutes.
